The ‘Grignan’ variety is known for its slower growth, with a more upright and sparse crown. It enters fruiting early, which is moderate and consistent. The fruits change color and ripen early. The oil has medium intensity and a moderate content of bio-phenols. Timing of harvest is crucial, as it allows the preservation of fresh, green notes. The variety is resistant to low temperatures, peacock spot, and olive knot disease, but sensitive to the olive fruit fly.
