The ‘Grignan’ variety is known for its slower growth, with a more upright and sparse canopy. It enters fruiting early, with moderate and consistent yield. The fruits color and ripen early. The oil has medium intensity and medium bio-phenol content. Harvest timing is crucial, as it allows preserving fresh, green notes. The variety is resistant to low temperatures, peacock spot, and olive knot, but sensitive to olive fruit fly.
